Everett’s Restaurant is located in the remains of a 15th century house in the Viking Triangle in Waterford. The mission at Everett’s is to combine fine modern Irish cooking with a relaxed atmosphere. They use the best seasonal and local produce.

Head chef Peter Everett, a Waterford native, is a former winner of the Eurotoques Young Chef of the Year competition. The win was a springboard to a successful career in Dublin where he was a sous-chef at Restaurant Forty One and worked in Michelin starred Chapter One. Over the years Peter has developed his own style of cooking which reflects his respect for high quality, local produce and the enjoyment that a well cooked meal can bring.

Peter has long been an advocate of seasonal cooking and serves flavoursome, fresh produce. The result is mouth-watering dishes designed to appeal to every food lover.

Set in historic surroundings, with elements of the dining rooms dating back to the 15th century, Everett’s has a warm character. The first of two dining rooms is the Front Room where diners will be surrounded by the history of Waterford. The house has been identified as the house of the eleven times mayor of Waterford, James Rice, whose 1481 cadaver tomb is preserved in Christ Church Cathedral. The second dining room is The Vault, which is located beneath the house. James Rice was also a wine merchant dealing mainly in Spanish wine and it is likely The Vault was used for this purpose.
